Monthly Recipe Exchange — February: Freezer & Crock Pot Meals

  • Ok Ladies, it’s time for us to exchange our recipes for the month of February!!

    I have a big family and we are always on the go! Freezer and Crock Pot meals help out a lot at the Hand house.

    Freezer meals:
    I have done Lasagna, Spaghetti, Hamburger Helper, and Sloppy Joe’s.  Lasagna is pre-made and all you have to do is cook it.  Spaghetti is sauce and meat and all you do is heat up the mixture and boil the noodles.  Hamburger Helper is cooked meat and the two packets opened and placed in a zip-lock bag.  All is left is the liquid items which I write on the outside of the zip-lock bag.  Sloppy Joe’s is cooked meat, the powder (I use the powder packets), and the tomato paste!  All you do is put the frozen block in a skillet and heat it up! These all are so easy and good!

     

    Frozen/ Crock Pot meals:
    An easy crockpot chicken meal includes frozen chicken, frozen vegetables (carrots, potatoes, and celery) and then I add a can of cream of chicken. This can be cooked over night.
    Bar-B-Q for us is a deer back strap cooked over night in water and Worcestershire sauce.  The next morning I drain the juice and add Bar-B-Q sauce and brown sugar.

    Dr. Pepper Shredded Pork (Crockpot Recipe)

    Ingredients
    1 whole Large Onion
    1 whole Pork Shoulder (“pork Butt”) – 5 To 7 Pounds
    Salt And Freshly Ground Black Pepper
    2 cans Dr. Pepper
    2 Tablespoons Brown Sugar
    2 bottles of BBQ Sauce (depending on size of pork)

    Instructions
    Warm the crockpot.
    Peel the onion and cut it into wedges. Lay them in the bottom of the crockpot.
    Generously salt and pepper the pork roast, then set it on top of the onions in the pot.
    Pour in both cans of Dr Pepper. Add brown sugar and stir in.
    Cook for at least six hours, turning roast two or three times during the cooking process. Check meat after six hours; it should be absolutely falling apart. If it’s not falling apart, cook for another hour. Remove meat from pot and place on a cutting board. Use two forks to shred meat, discarding large pieces of fat. Discard all cooking liquid. Return shredded meat to the crockpot and add BBQ sauce. Keep it on warm until ready to serve as BBQ sandwiches.

  • Red Beans & Rice
    This is the BEST red beans & rice recipe, so easy, and always so good!

    Ingredients:
    1 Yellow Onion chopped
    1 Green Bell Pepper chopped
    3 Stalks of Celery chopped
    Half Pound-1 Pound Andouille Sausage (smoked sausage can be substituted)
    1 Pound Bag Red Beans
    3 Cloves of Garlic minced
    3 Tbsp Creole Seasoning
    7 Cups Water

    Remove casing from sausage and cut into round pieces and then cut those in half.The sausage amount and type is based on personal preference. If you really like sausage, use one pound. Also, the Andouille sausage makes the dish a little spicier, so if you prefer a more mild dish, use regular smoked sausage. (Country Pleasin’ is the best brand)

    Pour all ingredients in crock pot and stir. Cook on LOW for 7 hours. Serve with brown or white rice.

  • Barbeque Chicken

    Boneless, skinless chicken breast
    1 bottle of your favorite BBQ Sauce

    Super easy: Just pour the BBQ Sauce over the chicken and it makes a very quick and easy lunch! I cook this most Sundays.

  • Awesome Potato Soup

    1 bag of chopped hashbrowns
    2 cans chicken broth
    1 can cream of chicken soup
    1 block cream cheese

    Place bag of hashbrowns and 3 cans of chicken broth/cream of chicken soups in crockpot. Let cook on low for about 45 minutes. Add block of cream cheese and continue cooking until melted. Top with whatever you like! We use crumbled bacon, cheese, and chopped green onions! VERY easy and my children love it!

  • Beef Tips

    Ingredients:
    2 lbs. of lean stew meat
    2 cans of cream of mushroom soup
    1 can of beef consommé
    1 can of water
    2 envelopes (1 box) of Lipton Onion Soup mix

    Cut the meat into bite size pieces. {I like the size they already are in the package so I skip this step.} Dump everything into your CrockPot, including the uncooked meat. Stir well. Cover & cook on high for about 4 hours. Serve over rice or mashed potatoes.

    **Note: I’ve never actually cooked this in a CrockPot. I usually cook it in a Dutch oven covered with aluminum foil in my oven at 300 degrees for 4 hours. I think it would be the same on high in a CrockPot, but don’t hold me to this.
    I think this recipe could also be made in bulk & frozen in portions for a quick meal later.
